
A simple breakfast frittata all made in one pan, the easiest way to feed a bunch of kids with minimal work!

There’s nothing wrong with a simple bowl of cereal for breakfast over the summer holidays but if you’d like to serve up something warm that’s also packed with protein you this Breakfast Frittata is one to try.
It’s all thrown together into one pan and baked in the oven. Brilliant if you’re feeding a crowd of kids. Or if not, the leftovers keep really well in the fridge for another day.

Start by whisking some eggs with plain flour. Warning – the flour will go a bit lumpy. Don’t worry about this. Mix it as much as you can but it will dissolve during cooking.
Line an oven dish with parchment paper and add in 3 sausages (with skins removed), cherry tomatoes, yellow pepper and grated cheese.

Use a fork to mash the sausages. This will be really easy with the skins removed.
Mix together with all the other ingredients and then pour in the whisked egg.

Bake in the oven for 20 minutes.
Once cooked, allow to cool for a few minutes in the pan before lifting the parchment paper out and then cutting the frittata into 8 slices.

Serve with some yogurt and berries for a really tasty and nutritious breakfast.
Leftovers will keep in an airtight container in the fridge for 2 days and can be eaten cold or reheated in the microwave.

Ingredients
- 6 medium eggs
- 1 tbsp plain flour
- 3 sausages
- 120g cherry tomatoes
- ½ yellow pepper
- 70g grated cheddar cheese
Instructions
- Preheat the oven to 180c and line an oven dish with parchment paper. I used a 24cm sq dish.
- Crack the eggs into a jug along with the flour and whisk with a fork. Don’t worry if the flour is a little lumpy. This will dissolve when cooking.
- Remove the skins from the sausages and add them to the oven dish along with the cherry tomatoes, peppers and grated cheese.
- Use a fork to mash the sausages and mix with the other ingredients.
- Pour the egg mixture on top then bake for 20 minutes.
- Allow the frittata to cool for a few minutes in the tin before lifting it out and cutting into 8 slices.
